completely honest creamy kale soup

remember my feelings on whirred food?  i don’t think this counts, but i did purree something scrumptious and nutritious for a delightful visit from joe and sarah.

adapted from cook, eat, think , a nifty food blog from a former chef/unschooling artist mama.

2 Tbsp coconut oil

handful shittake mushrooms, chopped roughly

6 cloves garlic, crushed or chopped

saute in large, large pot

when saute mixture is soft and fragrant add

4 cups broth (i used a thai/coconut curry themed one i found at publix, any basic broth would work)

5-6 red skinned boiling potatoes, chopped, unpeeled

boil at medium-medium high, covered, for 30 minutes until potatoes are tender

add

4 cups chopped kale

1 sheet nori or other seaweed, chopped

2 Tbsp green curry

continue at medium, covered, for 15 minutes

use a food processor to blend your concoction to smooth (or if you’re fancy, an immersion blender)

return mixture to pot, add

1 cup cream

1 cup of half-and-half

1 tsp coarse sea salt

simmer on low, 15 minutes.

  1. I haven’t been to her cooking blog in a while…..looks like a trip is in order. Speaking of trips……October sounds like a JIM DANDY time for the Collinses to be trippin’….C-ville might work…have you checked out any choo-choos that chugga-chugga through the Star City (that would be Roanoke, my friend)?
